Recipe: homemade breakfast burritos – Start the day right with this quick treat

It’s easy for busy working families to fall into a rut when it comes to breakfast.

There’s little time to prepare anything interesting, leaving many of us to lean on quick, unsatisfying items like cold cereal and instant oatmeal.

The truth is, if you add about five minutes to your prep time, you can start the day with something delicious, healthy and filling. Breakfast burritos are one my favorites.

Start with locally made corn or flour tortillas by Hola Nola!, now available at independent grocers around Baton Rouge. Scramble an egg or two in a large non-stick pan with a little olive oil, adding any combination of fresh spinach, feta or cheddar cheese, salsa, black beans, bits of leftover chicken or ham, roasted veggies or anything else that’s in reach.

Once the eggs are cooked but still soft, slide them to the side of the pan. Add a tortilla or two to the empty side, and cover the pan for two minutes to allow the tortillas to steam. Fill each one with the eggs, and fold over. Top with crispy bacon, avocado or pico de gallo and serve immediately.
